Karen Thomas is an owner and partner of Pineapple Eddie Southern Bistro in Erie’s Our West Bayfront Neighborhood. Hailing from New York City, Karen’s been a successful entrepreneur in the hospitality industry for decades and having worked at some of the finest establishments anywhere. She is attended Johnson & Wales University in Providence, RI and Schiller International University in Strasbourg, France where she received a BS in Hospitality Management/Culinary Arts.
